Yummy Pizza

I made some really yummy pizza a few weeks ago.  I was inspired after ordering a gourmet onion pizza at Seaside with Cara and the boys.  So this was my attempt at re-creating it. And, I think I did a pretty good job.


For the dough, I made mom's pizza dough recipe only I substitute 1 cup of whole wheat flour for 1 cup of regular flour.  As I was mixing the dough I added 1/8 cup of water a 1 Tlb spoon of olive oil since I noticed my dough was a little too dry.  This turned out to be the best batch of dough I've ever made!  I needed to speed things up so I turn the oven on 180 and then set the dough in the oven with the temperature off.  I had no problems getting the dough to rise (didn't really keep track of time..so don't know how fast it was)

For the toppings, I sliced 4 medium to large yellow onions and cooked them down until they were caramelized.  This takes a good 30-40 minutes.


For the sauce, I simply opened up a can of plain tomato sauce (I think this is one of the secrets to the success of this dish--keep all the flavors very simple to emphasize the onions).  I salted and peppered the sauce and minced 4 gloves of garlic (I'd add more in the future...just didn't have the energy to do more).  That's it!  No Italian seasoning--nothing!

I rolled the dough out nice and thin.  Make two good size pizzas--although the second turned into a pepperoni pizza b/c I only had enough onions for 1 pizza (Yes, 4 onions only makes one pizza--don't skimp on the onions!).  Added a layer of sauce.  Put a thin layer of provolone cheese on the pizza (had extra in the fridge--don't know if it matters what type of white cheese you use)--I think I used 6 deli slices.  Piled the onions on the pizza, then put small dabs of fresh mozzarella on top.  I wouldn't overdo it with the cheese, again it's all about the onion (and the garlic--you could really taste the garlic!)

End result:  Very yummy pizza.  Definitely worth the effort.  This one will go on our list of gourmet pizzas.
